In fact, I predict “you’re going to like this recipe, even if you don’t like it.” That may be an oxymoron but I assure you that I am not a moron on oxy.
Let me explain. There are three main parts to this recipe consisting of
a) the potato bowl,
b) the meat stuffing and
c) cheese.
Chances are pretty good that you like them all. So even if you don’t particularly care for this recipe exactly as shown below, there is plenty of opportunity to make this recipe your own and the whole will become more than the sum of its parts.
Step One:
In a nutshell, start with mashed potatoes. If you don’t have a preference, make the mashed potatoes as per the recipe shown below. If you have a favourite recipe for mashed potatoes, feel free to use your recipe instead. A word of caution: If your mashed potato recipe uses a lot of milk, chicken broth or any other liquid, be sure to use it sparingly. You will want your mashed potatoes firm enough to form into balls that you can make into small bowls without falling apart.
Step Two:
Make our own meat stuffing. You can make it with ground beef as this recipe calls for or you can make it with ground pork or ground chicken. Hell - make it with tofu if you want. Your preferences are your preferences. Nobody’s going to judge you. Add onion, celery, parsley or any other herbs or spices that you desire and have at it.
Step Three:
Pick your cheese. What kind of cheese do YOU like? You can use Parmesan Cheese, Mozzarella Cheese, Feta Cheese, Cheddar Cheese, Goat Cheese, Havarti, Gouda or Blue Cheese or a combination of any of these. Add some cheese to your mashed potatoes and add it to your stuffing. Sprinkle more on the bottom of the potato bowl after you’ve formed it but before you add the stuffing and don’t forget to sprinkle a bit more on top before you bake it. As the Dave Clark Five said, “Any way you want it, that’s the way it will be.”
So it’s up to you. You can be open minded, give this recipe a try as is and see what you think of it first… or you can just skip ahead to make your own version of it. One way or the other… you’re bound to like it.
The Original Recipe
Prep Time: 45 min. (overlapping some cook times)
Final Cook Time: 10 - 15min.
Total Time: 1 hour.
Yield: 6
Stuff You’ll Need:
4-6 medium potatoes, washed, peeled and cut up to small to medium sized pieces.
Salt, divided
1 lb ground beef
1 large onion, chopped
Pepper
Paprika
2 tsp Minced garlic
1 cup marinara sauce
2 tbsp butter or margarine
1 cup Parmesan Cheese, grated, divided
Do This:
Place potatoes in a pot and cover with water.
Add a tbsp salt.
Place on the stove on high heat and bring to a boil.
Let simmer for 15 minutes until potatoes are soft.
While potatoes are cooking, cook ground beef in a frying pan over medium-high heat.
Add onion.
Add salt, pepper and paprika to taste.
Mix in minced garlic.
Mix in marinara sauce and simmer on medium-low for 5 minutes.
Preheat oven to 400° F.
When potatoes are cooked, drain and add butter or margarine.
Add ½ cup parmesan cheese and salt to taste.
Mash the potatoes.
Once mashed, form the potatoes into 6 balls and arrange them in an oven proof baking dish.
Form each potato ball into a small bowl.
Sprinkle 1 tsp of parmesan cheese in the bottom of each bowl of mashed potato.
Add the ground beef and marinara sauce mix to each bowl.
Sprinkle the remaining parmesan cheese over the top of the filled bowls.
Bake for 10-15 minutes.
