Homemade Tomato Soup

Forget Campbell's Tomato Soup. This is a quick and easy way to make your own homemade tomato soup from scratch. If you prefer your soup not quite so thick leave out the flour.

Don't be afraid to experiment with different herbs and spices such as basil, rosemary or thyme instead of, or along with the oregano.

Prep Time: 5 min.
Cook Time: 45 min.
Total Time: 50 mon.

Servings: 4

Stuff Required:
  • 4 heaping tbsp butter
  • ¼ cup flour (omit if you don’t wish your soup to be thick)
  • ½ sweet onion chopped
  • 2 cloves garlic, minced
  • 20 oz tomatoes, whole, peeled
  • 1 ½ cups chicken broth
  • Salt
  • 1 tbsp oregano
  • Croutons or crackers
Do This:
  1. Melt butter in a large pot on medium.
  2. Stir in flour.
  3. Add onions and garlic and cook for a minute.
  4. Add tomatoes with their juice and the chicken broth and bring to a boil.
  5. Add salt and oregano to taste.
  6. Reduce to simmer and cook for 45 minutes.
  7. Pour soup into a blender and puree.
  8. Serve with croutons or crackers.
