If you’re looking for a quick and easy meal to make for supper that’s a little more substantial than grilled cheese sandwiches or hot dogs, you won’t find anything much simpler than Baked Pork Tenderloin.
You don’t have to be a master chef by any means. It’s probably about the easiest meal you can prepare and you can’t go wrong choosing to serve it to even the most critical dinner guests. They are certain to love it. About the only way you could ruin this meal would be if you decided to go have a “quick” look on Facebook after putting it in an oven with no timer. (We all know how long a “quick” look on Facebook can be.)
In the photo you will see I have prepared this with Stuffed BBQ Potatoes and Baked Carrots. But you could also prepare this with any style of potatoes and side dish of vegetables that you wish.
Prep Time: 10 min.
Sit Time: 40 min.
Cook Time: 30 min.
Total Time: 1 hour, 20 min.

Baked Pork Tenderloin, Stuffed BBQ Potatoes & Baked Carrots
Stuff You’ll Need:
1 kg pork tenderloin
Dry rub of your choice
Vegetable Oil
Your favourite BBQ Sauce
Do This:
Sprinkle dry rub on pork tenderloin and rub it in.
Let it set at room temperature for at least ½ hour.
Preheat oven to 400° F.
Put cast iron frying pan in the oven to heat.
Using oven mitts transfer the cast iron frying pan to an element on the stove on high.
Add vegetable oil to the frying pan and sear one side of the pork tenderloin for 2 to 3 minutes.
Turn and sear the other side for another 2 to 3 minutes.
Place cast iron frying pan back into the oven with the pork tenderloin for 20 minutes.
Remove with oven mitts and brush liberal amounts of BBQ Sauce on all sides of the pork tenderloin.
Return to oven and cook for another 10 minutes until the internal temperature reaches 145°F.
Remove from oven with oven mitts and cover with aluminum foil and let sit for 5 to 10 minutes.
Slice and serve.
