Parmesan Baked Pork Chops

If you're hungry for a good home-cooked meal like Mom used to make, but don't have a lot of time to prepare it, you might be tempted to reach for a Swanson Hungry-Man TV Dinner. Of course, unless your Mom wasn't a very good cook, you'd likely be disappointed.

I don't think my Mom ever made these Parmesan Baked Pork Chops, but it's very much like some of the meals she prepared for our family on a Wednesday night. Wednesdays were "pork chop night" at our house when I was growing up and I always looked forward to how Mom would prepare them. She found a lot of different ways to prepare pork chops and I'm sure Mom would approve of this recipe.

Served with mashed or scalloped potatoes and a side order of mixed vegetables or canned corn this recipe always takes me back to Wednesday evenings at the Young Household in the 1960s.
