Lick A Liquor Lollipop!

So... Today is National Moon Day AND it is National Lollipop Day.

You can either celebrate the date that man first walked on the moon in 1969 (or didn't if you're a conspiracy theorist) by:

1) taking a walk on the moon,

OR

2) licking a Lollipop in recognition of the sweet treat that has been arouLnd since the middle ages.

Not being an overly ambitious sort, I prefer the latter.

And here’s a fun “adult” version of the lollipop that you might want to lick today.

It’s just one of over 100 cocktail recipes for a book I am working on tentatively titled “Cocktails For Two” that I hope to publish later this year.

Liquor Lollipops

Stuff You’ll Need:

  • 4 oz Hard Liquor of your choice

  • ¾ cup Water

  • 3 cup Sugar

  • ½ cup Corn Syrup

  • 1 splash Flavouring (optional and your choice)

  • Food Colouring (your choice)

  • Lollipop Sticks

Do This:

  • Place a silicone mat on the counter for the lollipops for later use.

  • Stir together water, sugar and corn syrup in a pot until mixed.

  • Place pot on medium high heat and bring to a boil without stirring.

  • Once boiling, check the temperature with a candy thermometer until it reaches 320° F.

  • Add in your liquor of choice and give it a quick stir.

  • If you are using flavouring, also add it here. Note: You needn’t worry about making each lollipop an individual flavour. Did you know that while Froot Loops come in 6 different colours they are all the same flavour?

  • The temperature will drop with the addition of the liquor so keep checking until the temperature has returned to 320° F.

  • Remove from heat as soon as possible to avoid boiling the alcohol out.

  • Spoon the mixture onto the silicone matt in pools that are your desired size for the lollipops. Each lollipop will be a different and slightly irregular shape unless you use a lollipop mould.

  • Dip the lollipop sticks into food colouring to make colourful swirls in the lollipops then place one end of the stick into the lollipop to harden in place.

  • Lollipops should harden in 10 to 20 minutes. If lollipops don’t harden it means they were not cooked to a high enough heat. You might want to calibrate your thermometer.

Caution: Make sure you don’t leave your alcohol based lollipops lying around for children to accidentally ingest.
