Alice Springs Chicken

When I'm looking for a recipe "to impress" my guests, this is my "go-to". If you want to tell your guests that you spent all day in the kitchen preparing this gourmet meal, they're apt to believe you. Of course if you spend all afternoon with them drinking beer, you're not going to be able to sell that. Make sure they're not invited until just before dinner is served. Or maybe confessing how little work is involved, will impress them even more. How could you possibly prepare such a succulent meal in such a short time unless you were a master chef? Served with a side order of Scalloped Potatoes and corn niblets this meal is fit for both King AND Queen. Prep Time: 10 min. Wait Time: 30 min. (overlaps more prep time.) Cook Time: 30 min. Total Time: 1 hour, 10 min. Serves: 6-8 Stuff Required for Honey Mustard: ¼  cup mustard ⅓ cup honey 2 tbsp Mayonnaise 2 tsp onion flakes Stuff Required for the Chicken: 4 boneless skinless chicken breasts Seasoning Sal...

Scalloped Potatoes

Image
If you're planning a meal that would be complemented with Scalloped Potatoes and you realize you've run out of potatoes and/or time, there's nothing wrong with grabbing a box of Instant Scalloped Potatoes and mixing them up. I'll be honest with you here. Instant Scalloped Potatoes are probably every bit as good as making Scalloped Potatoes from real potatoes. And if you hide the box, your guests will likely never know the difference. But if you take pride in "making the real deal" and have a little extra time to prepare them, here's a recipe that's quick and easy to make. And it will save the day when you run out of Instant Scalloped Potatoes too. Prep Time:  15 min. Cook Time: 1 hr, 15 min. Total Time:  1 ½ hr. Servings: 4 Stuff you need: 4 medium potatoes 2 ½ tbsp flour 1 tsp salt 1 ½ cups of milk 1 ½ tbsp margarine 1 ½ medium onions, chopped Do This: Preheat oven to 375° F. Peel potatoes, wash & slice thin. Combine flour and salt in a small bowl...

Parmesan Baked Pork Chops

Image
If you're hungry for a good home-cooked meal like Mom used to make, but don't have a lot of time to prepare it, you might be tempted to reach for a Swanson Hungry-Man TV Dinner . Of course, unless your Mom wasn't a very good cook, you'd likely be disappointed. I don't think my Mom ever made these Parmesan Baked Pork Chops, but it's very much like some of the meals she prepared for our family on a Wednesday night. Wednesdays were "pork chop night" at our house when I was growing up and I always looked forward to how Mom would prepare them. She found a lot of different ways to prepare pork chops and I'm sure Mom would approve of this recipe. Served with mashed or scalloped potatoes and a side order of mixed vegetables or canned corn this recipe always takes me back to Wednesday evenings at the Young Household in the 1960s. Prep Time:  5 min. Cook Time: 4 5 min. Total Time:  50 min. Serves: 4 Stuff Required: 1 cup Parmesan cheese 1 cup Italian brea...

Published In The Great North Arrow, April 2021: Maple Rum Cocktail

Image
Maple Rum Cocktail - jim Young “One cocktail is alright. Two is too many. Three is not enough.” - James Thurber These warm sunny days are helping to get the sap flowing in the maple trees as well as the blood flowing in our tired, old bodies after a long, cold winter. So while many of our neighbours are busy tapping trees and boiling down the sap for the production of maple syrup, the rest of us are happy to sit out on our decks, relax and soak up the sun, longing for summer to arrive. It might only be for an hour or two on the best days, but we’ll take what we can get. We weren’t able to make our annual trip to Cuba this year OR last year for that matter, but that doesn’t mean we can’t enjoy the sun in Caribbean style in our backyard even if it is brief.  To help achieve this, I like to combine some traditional Cuban flavours with some typically Canadian flavours by smoking a fine Cuban cigar while sipping on a cocktail made with rum and maple syrup. Two years ago Mike Clap...

Published In The Great North Arrow, April 2021: Why I Trust Big Pharma With The Covid Vaccine

Why I Trust Big Pharma With The Covid Vaccine - jim Young “Life or death for a young child too often depends on whether he was born in a country where vaccines are available or not.” - Nelson Mandella Let me first qualify my title by saying, “I DON’T trust Big Pharma. At least not completely and certainly not without reservation.” I have read the conspiracy theories exposing the evils of Big Pharma and their plots to control and profit by keeping people sick. Everyone has heard stories about Big Pharma’s efforts to discredit and censor natural remedies that might be as, or more effective than, their chemical equivalents. Now, I have a tendency to believe that where there’s smoke, there’s fire. Big Pharma has a history of fraud, bribery, lawsuits and scandals and have received countless criminal charges and fines. That seems pretty smoky if you ask me. To complicate matters, when you have THAT much money, it doesn’t become much of a stretch to believe that government agencies might also...

Mother and Child Reunion

My Shirley loved this chicken breast recipe that I made for the first time today. At least I think she loved it. She told me she loved it and I would like to think I can take her word for it, but sometimes I worry that My Shirley tells me that she likes my cooking just so I will do it more often. Of course that would defeat the purpose because, what's the point of me cooking if she doesn't like what I cook? Unless she is just hoping that I will eventually get better over time and she'll never have to cook again. It's bad enough that I am OCD but I think I'm starting to add paranoia to my list of "endearing quirks". This recipe calls for Stove-Top Dressing and there will be lots left over that can be saved for another time. I used some of the leftover dressing to mix in with the double-baked potatoes I made as a side dish. Of course you could mix it in with mashed potatoes as well or even serve some as a side dish on its own. It's up to you. I'm...
