Mexican Fries (in 3 easy steps)
Whether ordering Mexican Fries as a side dish, an appetizer to split with My Shirley or as a meal in itself, nobody makes them better than Jake's Place Restaurant or Roxie's Diner in Port Loring. I can't say one is better than the other, so you'll just have to drop into both Jake's and Roxie's sometime to decide for yourself.
I'll be honest with you though. This recipe isn't quite as good as either, but sometimes when I want some Mexican Fries at home and just don't feel like ordering take-out, they are a close second and worth the effort.
The recipe may seem long and a bit complicated when you first look at it, but when you tackle it just one step at a time, it's really pretty simple. Try it.
Then visit Jake's or Roxie's and see how well you did.

Note: Preparation and cook times in all of my recipes are estimates at best and may vary depending on how fast you are in the kitchen.
The individual cook times in each step of this recipe do not add up to the total cook time shown above due to overlap as the ground beef can be cooked while the French Fries are baking.
STEP 1: MAKE THE FRENCH FRIES
Prep Time: 10 min.
Cook Time: 45 min.
Total Time: 55 min.
Stuff Required For The French Fries:
2 potatoes
2 tbsp cooking oil
1 tsp Paprika
1 tsp Garlic Powder
1 tsp dried onions
2 tsp Taco Seasoning
Do This To Make The French Fries:
Preheat oven to 450° F.
Wash and cut potatoes into strips lengthwise.
Mix cooking oil, paprika, garlic powder, dried onions and Taco Seasoning in a bowl.
Add potatoes and mix your hands until potatoes are coated.
Line a baking sheet with parchment paper.
Spread potatoes on parchment paper.
Bake for 30 minutes or until the potatoes are cooked.
STEP 2: MAKE THE HAMBURGER
Prep Time: 5 min.
Cook Time: 5 min.
Total Time: 10 min.
Stuff Required For The Hamburger:
1 tbsp cooking oil
½ lb ground beef
3 tbsp cooking onions, chopped
2 tsp Taco Seasoning
Salt to taste
Do This To Make The Hamburger:
Place cooking oil in a frying pan on medium heat.
Add ground beef, onion, Taco Seasoning and salt and mix together.
Cook for about 5 minutes or until ground beef is cooked.
STEP 3: MAKE THE FRENCH FRIES MEXICAN
Total Time: 5 min.
Stuff Required To Make French Fries Mexican:
cooked French Fries from above
cooked Hamburger from above
salsa
2 or 3 green onions, chopped
2 tsp mixed hot peppers, sliced
½ tomato, chopped into medium sized chunks
Tostitos Cheese sauce, warmed
Sour Cream
Do This To Make The French Fries Mexican:
Place ½ of the french fries on each of 2 plates and cover with the cooked hamburger.
Spoon some salsa on top of the hamburger.
Sprinkle green onions, mixed hot peppers and chopped tomato over all.
Cover the mix with cheese sauce.
Add a spoonful of sour cream on top or serve as a side dish for dipping.
